"Barszcz z uszkami" is a beetroot soup with small and round dumplings filled with mushrooms and/or minced meat.
"Barszcz" (\barʃʧ̑\) is the name of the soup and "uszka" is the name of the dumplings. "Uszko" is the diminutive of "ucho", ear.
