Baking is not an exact science.... It very much depends on relative humidity of the time of baking how long it's been baked how much cornmeal is on there .... So many factors can change the weight..... Day to do even hour to hour.... You are panicking and conspiracy about stuff you don't know

On top of that proof time of the bread can wildly change how big they look..... All while remaining the same average weight

As a person that's worked in a bakery the bread is pre-made and brought in frozen in many cases and the on site bakery thaws preps proofs and bakes it ..... They don't determine size .... And they order these breads cases at a time weeks ahead of time
