Chicken and egg. You go to update/reboot the virtualization host and your internet drops.
It is possible to do it in proxmox where it could migrate between servers, if each box has NICs you can dedicate to the router.
N100 Topton minipc was $117, so it's a bit hard to justify the complexity.
