Thank you for all that info! I don’t like to use too much of the strong flours either due to the chew but was so intrigued by the loaves you’ve posted using TB and Exp. I also need to use up some of the sifted artisan hanging in my freezer for way too long. Seems like a perfect formula!

Is the is one you used some JM sifted artisen? Can you remind me what your formula was again? I tried to find it but couldn’t, should’ve taken a screenshot. I just received expresso and trailblazer today for first time, excited to use it!!
