music and its theory is kind of its own language so even if you don't have an instrument there's a lot to be gained in just studying and research. singing/vocal theory is also cool. check out 8-bit music theory on youtube for digestible (imo) music theory that is incorporated into video games

most accessible is probably guitar but the thing that'll teach you the most is probably either drums/percussion or piano (though those are probably also the least accessible). recorder/flute are great entry-level "blow air into it" instruments, but they get complicated. idk shit about violin.

took 10yrs of piano lessons as a kid and grew up in a family of musicians and i gotta tell you in the modern era all it takes is dedication and a learning outlook. thrift and consignment stores have cheap(ish) instruments, pick something that looks interesting to you!
