It's a niche fact known by readers of SMG's TCRF article that Kamella's wand and the interior of the Engine use an image of the Gamecube logo as an envmap, but what isn't widely known is this planet from Bowser Jr.'s Fearsome Fleet in SMG2 uses the same image for the same purpose.

(A medium LOD model exists for the planet that also retains the missing parts and large hole, meaning the complete design only survives in the low LOD model.)

The LOD model for the boss planet in Bowser Jr.'s Boom Bunker has a design that differs from its high poly counterpart, which features an extra cog and a drill-like bottom. Oddly, the high poly model design seems to imply that the additional parts were removed, leaving behind a large hole.

Though it may be obvious by the large grapes, the leaves dotting these vines in Honeybloom Galaxy are explicitly "grape leaves", according to their texture filename ("GrapeLeaf01"). The interesting part is, despite the more cartoony stylization, the leaves do resemble real life grape leaves.

Here's an interesting factoid:
The Life Mushroom held on sticks by Lumalee in Super Mario Galaxy/2 has some slight jank texturing that you're never at an angle to see properly. It's got an extra, super-squished star spot on its back that isn't present on the regular Life Mushroom model.

In a weird move that was likely made for attempted optimization, one of Mario's hands was removed from his model in the new Super Mario Galaxy port.

I'm unclear on the specifics, but I'm assuming they just mirror the other hand.

Oddly, this doesn't apply to the Super Mario Galaxy 2 port.

Super Mario Galaxy features multiple types of gravity - one of these gravity types is spherical. By design, it will pull you towards the center of itself, allowing you to remain firmly upon ground of any spherical planetoid that's placed within the center of this spherical gravity.
