The first image is batching for my recent gf talk, other image is from years ago better showing the cut in question for batching - you can 'reassemble the half grapefruit' in a juice king or other bar pro press, the 1/8 bits go in the orange hand press pictured.

The central core is the 'umbilical cord' of the fruit and in bitter citrus contains most of the unpalatable material (such as naringin also in the pith) and does not contribute to any flavors which are in the juice sacs. Removing gives easy access to sacs avoiding flavorless bitter.

I took this picture 5 years ago today, it popped up in my cloudapp 'memories'. I have been talking about it as of late for my grapefruit seminar and mixology class. I created it in 2011 after realizing that my own creative taste was in "flavors of strong contrast," here examplified in "Tenebrism."
