The class specific quests are definitely gone and only one hub the last couple expansions. Dunno about quest feel, I enjoyed the quests in legion so it may or may not have changed for you.

Iirc you could just sub and try out the last expansion, dragonflight, without paying more than the sub.

Depends what it was that ruined the game for you. The game certainly looks better than ever, but idk how the story has been since halfway through dragonflight. Old talent trees have been back for a few years now, and i thiiiiink borrowed power systems have stopped?
