Use olive oil instead of butter and you will be close. Use it in the roux for gravy, in your dressing pan instead of butter, and make mash with lots of garlic and olive oil instead of butter and milk, etc. I'm neither kosher nor Jewish but my guests seem grateful when I take these steps...
