100% whole wheat bread!
I soaked flour with buttermilk from the butter I made (seen in crumb photo) and did a biga, then i kneaded it all together with a little flour with salt and instant yeast mixed in, and incorporated honey and melted butter. Baked in dutch oven then no lid.
