I kind of love the Chinese pick n mix canteen. It’s a lot of variety for $7, endless fountain drink and endless dessert (green bean soup, not pictured).

Still not happy with the openness of the crumb but it’s getting there I guess. It’s not absolutely necessary to buy one of those fancy proving baskets right?

Really impressed by those loaves people tip out with the amazingly strong skin and jiggliness. Maybe I didn’t work the dough enough.

Is the tight crumb because of insufficient hydration? Insufficient rising? Was my sourdough starter not ready? Overworked the dough? 😳😳😳 I really wanted to achieve those big airy loaves with giant holes in them.
