There are two types of kaki - astringent and non-astringent. You need to hang astringent kakis after harvest, which you might have seen if you’ve travelled in Japan in autumn. Our kakis are non astringent varieties from Japan and you could eat straight away but we wait till they’re very ripe.

Kaki (柿) is fruit quite common in Eastern Asia. Kaki is the Japanese name of it. In the US, perhaps it’s called persimmon. In the UK, you might see them sold as Sharon fruit, which is a variety name of kaki. In our area of France, you see many kaki trees in people’s gardens, and sold as kaki.
