I tend to think they won't: mainly because daemons don't "look" like animals - as in, both humans and animals can instantly tell daemons apart from real animals; and while they take an animal shape, daemons are *people* first and foremost. It'd be like a person in a treif animal costume

So my vote goes for the TV's approach of placing Lyra on the neck, far from his legs.
(TV!Iorek also seems more book-accurate in his sheer size IMO - movie!Iorek seems smaller/more realistic, which would probably make Lyra's size more of an inconvenience, even as her weight is still negligible)

Iorek said that Lyra's weight was nothing compared to the weight of his armor, so it probably has more to do with keeping movement convenient rather than keeping his body stable...
