Spatchcocked and roasted a chicken yesterday.
Made a stock with the carcass overnight.
Got a few meals for the dog from the extra scraps that yielded.
Now braising veal shanks in the stock + a few aromatics.
Will use that braising liquor to make a minestrone.
Then use the veal bones for more stock.
