Also would be nice if you didn't have to install shit and just put the Disk in, played the game, then when you got to the end of how much space that Disk can hold (conveniently timed to a suitable story beat), you move on to the next one. Imagine!

Like a cinema intermission when you have to get up out of your seat - it allows extra time for the audience to digest and the story to be placed out.

Imagine if Final Fantasy VII just went straight to the next screen after the end of disk 1? It would suck. Sure, they put in like "end of chapter 1" or whatever on digital versions but it's not the same when you don't have to get up off of the couch to swap the Disk.
