Made some vegan cream cheese using tofu, strained homemade soy yoghurt and coconut oil as well as some basic flavoring agents (nooch, salt, lactic acid, pinch of sugar). The texture is buttery and melts in your mouth easily. It couldn't bake into a cheesecake without starch and chickpea flour.

The most difficult pastries to veganize often require thinking outside the box. Made with simple ingredients but with a deep understanding of food science. No baking powder used at all. #veganpastry
