I think if it played like the 3D segments (sans boost and the like) in Shadow Generations 99% of people would be happy. The modern VAs would be controversial as would losing the questionable timing of the cutscenes but ultimately it wouldn't stop anyone from buying it.

An updated camera system is really the main draw of an Adventure remake and it would completely make the game less jank. I love the Adventure series more than I love Sonic on the whole, but they are not without obvious flaws that would greatly enhance the experience if fixed.
