🤣I should! I've actually used that example in interviews to demonstrate my hard wired planning skills and importance of a post mortem after any major project/show.

Planning includes my famous triple strength gravy, I'm most proud of that and everyone who has had it, loves it.

Wish smaller 10'ish pound birds are available year round. Carcass for congee, breast meat for sandwiches, dark meat for the meal, scraps for stir fry. Good variety for a week of meals.

I do a spatchcocked chicken regularly and make soup with bones and rest as above. A lot of meals for little $

Project planning and analysis skills at work. Have a book of notes and do a pre plan and a post mortem. Notes include exact weight, environmental conditions, temp readings at X time, etc. Built a playbook over the years for every step including sides that make it stress free. I'm a nerd 🤓🤣

For sure, it's a stupidly underrated danger on how easy it is for things to go sideways. Most people just don't understand how dangerous that amount of hot oil is and your emphasis on the bird needing to be completely dry is very overlooked point.

Bonus of having that as an appetizer. I swap out a fresh layer halfway through cook time.

Then hope I escape with limbs intact as I set the plate out for grabs.

Too much work to go through all that. On top of having a few gallons of leftover oil.

I'll stick to my usual method which uses bacon over the breast meat to keep that juicy while dark meat catches up.

I've used my mechanic for over 15 years, he's an old school guy, completely trustworthy. He only recently accepted cards. But I still pay him by check. One time I forgot my checkbook, started to pull out my card, he waved me off and told me to mail it at my convenience He trusted me and also cheaper

Exactly! I have online payment set up for all my accounts and my mom's too (which I handle) whenever possible. But so many of the government ones, federal or local have a 3-4% fee and it adds up fast!

They've been conscripting people from outlying provinces in ever increasing numbers the past year. Meat grinder has to be fed. Unfortunately no one cares enough about the people in those provinces to publicize it

Turning point may be when they start taking people from cities in big numbers.
