Rounds of thinly sliced sweet potato and beetroot, a layer of thin strips of courgette, sliced raw cauliflower, tomato and fennel slices, carrot strips, and thinly sliced onion, all topped with a mustard vinaigrette and toasted seeds. The seeds are pumpkin seeds, sunflower and pine nuts.

Mmmm - salad
Lettuce base with thinly sliced courgette, sweet potato and beetroot, covered in carrot strips with fennel and avocado. Slivers of courgette, sweet potato and beetroot, topped with fennel, tomato and onion. Lettuce base, topped with sweet potato slices, tomato and avocado, decorated with carrot strips. Lettuce, tomato and beetroot slices, carrot strips, red onion slices and slightly defrosted frozen peas.
