Today, for our festive lunch we made a beautiful Butternut Squash Wellington with lashings of mushrooms, spinach, herbs, pine nuts, garlic, red onion... I’m so grateful for all of these plant delights 💚🌱♥️

Decided to try this ‘no-Turkey’ out of curiosity. We’ve named it ‘Fakey’, my husband & I said from what we could recall it was a much improved flavoursome version of the slaughtered bird. My kids have never had actual Turkey so they said it just tasted like a flat Vegan sausage 😄

I made a courgette & sweet potato risotto, using nooch & violife. Very delish…and plenty spare to roast in peppers tomorrow 😊🌱

My 13yr old daughter & 11yr old son went Vegan this time last year. My niece in the centre, Vegan from birth. My kids said last year ‘I’m Vegan now’ that was it, they never miss anything or feel deprived, it wasn’t hard for them to ‘quit’ They’re healthy & happy. And I’m so very proud of them ♥️
