Had some Japanese curry and some leftover puff pastry, so it was a no-brainer apparently!
Served with a Ginger and Garlic Aioli which was a really good pairing inspired by chat.

Finally got my offset smoker/grill restored to a good condition.
This is whole duck brined with black pepper, bay leaves and star anise, then hot smoked; and some smoked chicken thighs too.

12 years ago I would have struggled to cook anything more complicated than heating up food from a can and slapping that on toast.
I was depressed, broken, lost.
It's taken over a decade, but I have rebuilt myself from the ground up, brick by brick.
