Know Black History: Norbert Rillieux, (1806 to 1894) was the chemical engineer who invented the Multiple Effect Evaporator under Vacuum. This invention was a boon to the sugar industry, increasing the production and quality of sugar.

Know Black History: James Hemings, (1765-1801) was the enslaved young man who accompanied Thomas Jefferson to Paris, where he was trained in the art of French cooking. Chef James Hemings returned to the states and introduced French fries, ice cream and macaroni pie to this country.
