Yep, the bacteria responsible for the fermentation eat up the compounds that give the strawberries their color, which bleaches them of their color.

Definitely my longest at 16 months. The strawberries fermented super rapidly, and once it all calmed down enough to where I didn't need to baby it, I pretty much forgot it in my cabinet for a year 😂
