Holidays made me miss a few days, so here's one of my favorites, the Cascabel pepper, very unique for its ability to hold shape when dried making it rattle when shook. amazing earthy flavor with a bite. 1000 - 3000 SHU

the Espelette pepper, rich subtle rustic and a small kick comes in at 500 - 4000 SHU

Guindilla pepper, the perfect pickling pepper, crisp and tart. almost as hot as jalapeno 1000 - 2000 SHU.

the Chimayo pepper, the smoky earthy mexican luxury pepper, 4000 - 6000 SHU

Chiltepin Pepper, an american native pepper, very small and a ample amount of heat. 50,000 - 100,000 SHU

Today's pepper is the Melrose pepper aka Chicago sweet, very sweet with no heat even though they look like a hot pepper. 0 SHU
