It’s personal choice in the end. I think for me it would be about finding which meal would be hardest to skip. These days I can skip lunch easily (but then I’m eating two meals within 10 hours - not what you are looking for). When I was younger I’d skip breakfast.

I’m remembering Theravada retreats.
Personally if I were going to restrict I would have breakfast and lunch and “allowables” in the evening.
