And the US/FDA doesn’t recognize gluten as a listed allergy … wheat yes but as you are learning gluten is EVERYWHERE

Surprisingly Italy is super safe for celiacs they have gluten free grocery stores and strict restaurant criteria for claiming to be “gluten free”

There are also celiac cruises!
