I think if you go to Settings -> Upload Defaults -> Advanced, you can find a settings that says "Automatic Dubbing"
I disabled it on my channel, I assume that this is the AI dubbing.
ALSO. If you go to Youtube Studio -> Settings -> Channel -> Advanced. be sure to disable third party training
