Used up a bunch of my master dough that needed a feed. Took the discard and added some more flour, water, roasted garlic oil and salt. Over night cold proof after many hours of stretch and folds yesterday. Turned out perfect. 🍞🍽️🍜 #losttogetheracres #breadsofbsky #homemade #bread

Used my master dough as a pre-ferment to make bagels. Fingers crossed they taste as good as they look.🍽️🍜🍞

Experiment of the day (month? year?). Created a master dough which will be used as often as needed until it reaches 200g of the master then "fed" with flour, water, yeast. As it ages it will take on sour notes like a sourdough without having to feed a starter. (1/2)
