In modern history, UNESCO recognized borsch as an intangible part of Ukraine's cultural heritage on July 1, 2022. And rightly so, the soup is inseparable from Ukrainian history, people and culture. While you enjoy Borsch you partake in our long and proud culinary tradition. SLAVA UKRAINI! 14/14

Borsch has always played a major role in religion and ritual in Ukraine. The soup is an absolute must in traditional ceremonies such as weddings, Christmas, Easter, wakes, christenings and other holidays. 13/14

Ukrainian ethnographer Pavlo Chubynsky wrote that not only was Borsch popular in Ukraine, it was eaten DAILY by Ukrainians. He also described the recipie which very much resembles the modern day soup we all know and love. 12/14

The father of Ukraine, Taras Shevchenko wrote several times about his beloved Borsch, including his favourite variants which was rubbed with millet and pounded with old lard (salo). 9/14

Ivan Kotlyarevskyi mentions Borsch several times in his seminal work the Aeneid - "If you don't eat borscht for three days, your heart will feel terrible, and now your intestines will tighten, and you will grumble in the candy." 8/14

Borsch was also referenced in fictions quite frequently - in Yakub Gavatovych's 1619 drama, he describes a dream where a character visits heaven and sees "there were pies there, and they also cooked Borsch". 7/14

Borsch played an important role to Cossack society. Many Cossack surnames made reference to the legendary soup, including Borscha and Borshchenko - both of whom appear on the Cossack Register in 1649. Pepper borsch was used to test young cossacks stamina and endurance. 6/14

By the era of the Cossacks, borsch became an staple meal on campaign. Typically all ingredients would be boiled in a cauldron or pot. However, recipes could vary radically. As described by Yevhen Hrebinka, borsch could even include fish! 5/14

The earliest mention of Borsch is from 1584. A German merchant, Martin Gruneweg, mentions the soup in his diary during his recounting of his visits to Kyiv: "Ruthenians rarely or rather never buy borscht, and everyone makes it at home, because it is their daily food and drink" 4/14

This sour and fermented soup spread to Poland, Belarus, and Lithuania. These soups became popular during the middle ages, however, it was in Ukraine where the trademark and most recognizable beetroot variant originated from. 3/14

The early slavic peoples of the fourth and fifth centuries AD were the first to create a proto type version of borsch made of Borschivnyk (hogweed). This is also the linguistic origin of the word borsch (which meant hogweed). 2/14
