Went back to the lazy way of making bread. I leave the firm starter in the fridge and refresh it only the day before. Less work and seems to work just as well as refreshing it every day.

This homely loaf is one I’ve made more than any other bread the last 25 years. It isn’t much to look at, but by God it makes the best toast I’ve ever had. It’s from James Beard’s bread book, wholemeal bread with potatoes. The odd thing about it is that the potatoes are grated raw into the dough.

Our traditional Christmas tree trimming pizzas. I don’t know when they became traditional, but several years our kids told me I was making pizza for the tree trimming “just like always.”

My oven is weird. The round loaf was baked in a Dutch oven at 475 for 20 minutes, then placed back in the oven for another 20 minutes.The oval loaf was baked on a stone with steam at 460 for 25 minutes with steam, then 15 minutes more without steam. The color is so much better on the oval. #breadsky

Tried something little different. 50/50 all purpose and freshly milled whole wheat, fermented at 82 degrees and baked the same day. I tend to underproof if anything and was trying to push it little. Good a good open crumb (not too open - I’d hate the butter to drip though)
