Spent a very satisfying couple of hours uncovering the steps the professor laid.

Tastes a bit like honey, but with a citrus edge.
Nice, but a lot of work - and it explains why maple syrup is so expensive!

Approximately 300ml of silver birch sap to make 20ml of syrup.
It's going to be a long slog but the proof of concept - using budding twigs to collect it rather than drilling a hole in the trunk and tapping it with a spile - works.
