This year for Passover we skipped the Manischevitz when making our Charoset.

Inexpensive Tawny Port really made it pop.

And the symbolic mortar got Costco DEI points, so there’s that!

Also had a great wine experience, courtesy of White Rose Estates in Dundee Hills, OR.

They do full cluster fermentation, removing a light extraction (3-4 days), medium (6-8d) and heavy (12-14d).

They shipped samples of all 3, then (via Zoom) guided us on blending to create unique expressions.

Kudos to The Wine Pair Podcast for highlighting an amazing varietal, Blaufrankish (Lemberger) , a highly versatile medium bodied red.

Although sometimes compared to Pinot Noir, the taste profile (IMO) mirrors Cab Franc.

The authors addressed this, could have emphasized more.

Collectively viruses account for much deterioration in brain health. For instance, an effective Epstein-Barr vaccine might prevent a lot of MS.

Convincing the public to take vaccines? That would require a different kind of brain health.

As an intern, I was paired with Ernesto Gonzalez for nearly half the year. We purchased paired finger puppets at the hospital gift shop, in solidarity.

I still carry a “Ernie,” which helps allay fears when examining toddlers. We listen to Ernie breathe, look in his ears.

Muppets are a blessing.

Pre-Hanukkah latkes last night (because I’m working in the hospital today).

White Bordeaux was the perfect pairing. The acid slices through the fat. Semillon provides a hint of sweetness while the Sauvignon Blanc in the blend sings with the onions.

That’s a big wow!

I shared a Barolo virtually with a friend in Chicago earlier this week (he had the same wine). It was a 2018. Great, but young.

Last night had two very different Washington State Syrah wines, one old world style (right), one new world. Astounding how each paired with different foods. The MCK did great with my wife’s high fat burger, with some smoke notes. The Lenore paired great with duck. Kudos to both winemakers!
