The bird is in the oven. Forgot to take a pic before it got covered in foil. Roast from 10-1. Rest from 1-2. Brown the skin from 2-2:30. Carve and plate and be ready to eat by 3. There’s no stopping us now.

Tonight, made turkey stock and then a gravy base. Just need to add drippings from the bird on Thursday to complete the gravy. My house smells so good right now.

One of my favorite articles I’ve ever read was Giri’s story about Conquoring the Carolina Reaper from the old site. He’s a great writer and storyteller. Can’t wait to read this.
