Lunch today!! I made the vinaigrette myself (mayonnaise, mustard, honey, vinegar, olive and avocado oil) and then threw on some leftover chicken.
Pickled avocado came out okay!! Very briney though, could have used some of the vegan cheese I have to mellow it out.

I roasted the kimchi in the pan first so the bread had extra flavor
Medium-low heat next time, just a tad too crispy and the cheese needed to be meltier
