I have a great fondness for the old days of Rogue. Hazelnut Brown, Shakespeare Stout, yellow snow, and even the original “malt liquor” version of Daddy’s Little Helper. If you were a homebrewer, Rogue was an influence for sure.

550 is one of my favorite Belgian ale yeasts. But it does always make me think of classic Belgian wit beers. Maybe if they brewed this again minus the wheat malt?

I’ve previously used a dehusked carafa special for dark beers where I don’t want roast. I suppose holding the addition to the end of the mash would also be prudent.
