I think I say "I've done my ___" more than anything else, but I think I've heard "I'm" as well.
The follow up: Yes. "I'm done my coffee" to me indicates completion of the coffee in whole, whereas "I'm done with my coffee" indicates being finished with attempting to complete the coffee.
