Codename : Evolution Extra Stouthorpe (2025) This is the next batch of the evolution series, the porter evolved to a stout in Ireland, and eventually to an Extra Stout. A little about this stout A black beer with a pronounced roasted flavor, often similar to coffee. The balance can range from fairly even to quite bitter, with the more balanced versions having a little malty sweetness and the bitter versions being quite dry.

Codename : Reyt Good Bitterthorpe (2025) This is a calibration batch, I acheived a much higher brewhouse efficiency (BHE) than expected on a recent batch, so I decided to duplicate the findings before I change my water requirements. I have come to truly appreciate the Best Bitter, so I opted to do something in a Yorkshire Style Bitter. The name asked one one, it is Yorskist slang!

Codename : Evolution Burton (2025) Next up in the Evolution Series of the British bitters is a strong British Ale called a Burton. I did a Burton style before, and really enjoyed it, so it was time for a repeat. A little about the style An ale of respectable alcoholic strength, traditionally bottled-conditioned and cellared. Can have a wide range of interpretations, but most will have varying degrees of malty richness, late hops and bitterness, fruity esters, and alcohol warmth.

Codename : Evolution Strong Bitter (2025) Next up in the Evolution Series is the strong bitter, as it is has undergone two iterations to get to this point of an even stronger form. A little about the bitter Strong bitters can be seen as a higher-gravity version of best bitters (although not necessarily “more premium” since best bitters are traditionally the brewer’s finest product).

Codename : Evolution Porter (2025) Next up in the evolution series is the America Porter. In the 1970s, it took another evolution from the earlier pre-prohibition porter to add some crystal malts for sweetness. A little about the porter Moderately strong roasted flavor, often with a chocolate and lightly burnt character, sometimes with a sweet caramel or malty richness in support.

Codename : Notts Best Bitter (2025) Two plus years after AI became a thing for the masses, I finally decided to request a recipe from these tech giants. I tried two different engines, and while each offered up similar recipes, there were some variance, so I employed my human brain to unify on this recipe. I only made some small adjustments to account for ingredients I had on hand, most notably the hops.

Codename : Mountain Portage Dork Mild (2025) Born from the desire for a less-hoppy, more approachable brew, the Dark Mild's history is a story of hitting the bullseye without much fanfare. Brewers, tired of aiming for bitter IPAs, found their true calling by crafting a beer that was smooth and easy-to-drink. Its rise in popularity was swift, as pub patrons found it to be the perfect "session" beer, a true quiver of flavour.

Codename : Mountain Portage American Stout (2025) The next up in my Evolution Series is the new world adaptation of the British Stout. It tends to have a higher alcohol content, and a hoppier profile. A little about the stout, Moderate to very high roasted flavors, often tasting of coffee, dark or bittersweet chocolate, or roasted coffee beans. May taste of slightly burnt coffee grounds, but this character should not be prominent.

Codename : Mountain Portage Helter Skelter American IPA (2025) Building off the recent success of high krausen dry hopping, this is the next batch up in my 2025 Evolution Series, will also be dry hopped during active fermentation. The English IPA was brought to the New World, and local barley, hops & yeast were used to evolve the IPA.

Codename : Mountain Portage PPPorter (2025) This porter is part of the Evolution 2025 series, a beer that evolved after it came to the New World from England, and reworked by German immigrants, utilizing local barley and hops, while relying on adjuncts such as corn. The name came AFTER Prohibition. The Porter, underwent another evolution in the 20th century, to be highlighted in an upcoming batch.

Codename : Mountain Portage Fetchez La Vache (2025) This Stout is part of the Evolution 2025 series, a beer that evolved in England, originally served as a tonic. The name you ask? Any Monty Python fan can answer that for you. A little about the beer, An English style of stout developed in the early 1900s. Historically known as “Milk” or “Cream” stouts, legally this designation is no longer permitted in England but may be acceptable elsewhere.

Codename : Mountain Portage Oatmeal Stouthorpe (2025) I think the oatmeal stout has been one I have brewed the most, I have wanted to brew one that was just a little darker than usual, and this was the batch to make it happen. This is part of the Evolution 2025 series, a beer that evolved within Britain by adding oatmeal, as a cost savings measure as it is an inexpensive ingredient.

Codename : Mountain Portage Brown IPA (2025) My first attempt at this, while not a brew fail, wasn't hoppy enough for it to be considered an IPA.This recipe will compensate for previous shortcomings, mosty by dry hopping. This wraps up the trio of brown ales of the Evolutions Series 2025. Separated from American Brown Ale to better differentiate stronger, highly hopped examples from more balanced, standard-strength beers.

Codename : Mountain Portage Irish Stouthorpe (2025) The venerated stout evolved from the humble porter, initially referred to as a stout Porter, this Irish stout is an example of a beer evolving in the Isles.
