You actually want to do TOC last. Unless you have it set to restart page count it should not restart the page count. But yes, TOC should always come last

Yes! Also, basic formatting is super easy. Just set your styles and use a section break (next page) and you're absolutely groovy

There is absolutely nothing wrong with self-publishing but to pay a company to publish your work is insane. I was almost scammed by the likes of Xlibris. I'm glad I found my editor though, she is amazing. KDP and ingram all the way for me as of now.
