Dry brined, spatchcocked, smothered in seasoned butter, and cooked in the oven at 375 °F until internal temp reads 155 °F.
Then yanked from the heat and the internal temp still rose to 165° F exactly over the next ~15 minutes.
Was my best turkey so far.
