Agreed, but people who just don't have alcohol in the house don't want to buy it for 1/2 cup for a recipe. It's okay to throw in 1/2 cup of broth, even a bullion cube will do, and move on.

It's a thing for people who either can't or just don't do any alcohol. The broth adds a bit of flavor, not the same, obviously, but it's a 1/2 cup of liquid.
