Things to do with one cup of dried soybeans: firm tofu (1 lb block) and falafel, with okara fibre instead of chickpeas. Verdict: tofu exactly as hoped. Falafel very tasty but doesn't hold together - maybe binder or panko coat needed. Lots left to play with. What to do with soy whey from tofu?

Had a wonderful surprise tonight, when @laurieartist.bsky.social and I stopped in at the Casbah de Vancouver Tea & Art. More than a tiny Algerian-French cafe. Owner and baker Nadia (also journalist and seamstress) is a one-woman cultural ambassador and storyteller.
