The mushrooms were part of the risotto. I sautéed the mushrooms first with onion, the added the rice, liquid and cheese as usual in a risotto.

Credit where it’s due: the ketchup–mayonnaise sauce is from our Bahamian college roommate, via his mother’s recipe collection. Flavorful and clutch in a pinch, though not exactly health food. The brown rice was simply our side that day.
