This is phở chua (sour phở), one of my favorite Vietnamese dishes, and not commonly found outside the far north. It’s pho noodles with a tamarind sauce, duck, sausage, pork, peanuts, herbs. Cao Bằng loves their duck (vịt) and so do I ❤️
