I'm intrigued! Is the scoby ferment replacing the traditional ferment or in addition? Is this process more or less water intensive than traditional processing?

While I have owned and ridden bicycles before, I was never much of a cyclist; my primary mode of transport for the past few years has been mopeds, e-bikes, and public transit. Bikes always seemed like work or something. Zwift is still work, for sure, but it's fun work, and that says a lot.
