Steam a peeled, diced sweet potato + mash w a can of drained black beans. Spread the mix on a tortilla, top with cheese + another tortilla + fry it like a grilled cheese. Serve w sour cream, salsa, guacamole (or nothing). Been making this at least 1× a month since my eldest (20) started daycare! 😋
