I cold proof overnight too, and straight into 500 preheated Dutch oven. When mine looked like that, the dough was too warm for the length of bulk fermentation. Cut your bulk time by an hour. See if that helps.

People have been baking bread for eons, it’s a learning process. My difficulty was thinking all yeasts behaved the same. I wanted to use really warm temps, ended up over proofing. Sourdough thrives in cool weather, that’s when the lactic acid develops well.

I was having the same trouble, end your bulk fermentation time sooner. Once I get through the stretching and folding, I go ahead and place in the banneton to rise, then refrigerate. Ambient temperature does affect the time.

Make sure to discard when it’s time to feed. That way you won’t accidentally starve your starter portion.
