We had a red cabbage we weren’t going to eat in time, so made kimchi with it, sliced as if we were pickling it. Very nice result - tastes a lot like pickled red cabbage at first, but then sour flavour comes across rather than harsh vinegar, and then the taste of garlic and chilli.
