When I travel my wife sends me pictures and videos of our parrots being adorable (sound on to hear our conure's happy/content sound).

You might like this book. It makes it sound like AI is an interesting combination of relatively straightforward math (linear algebra, eigenvalues/vectors, …), immense dimensionality, and not well understood heuristic rules that work surprisingly well especially at large scale for unknown reasons.
