Or perhaps you could add a rock plate insert under the insole? I think that might reduce the flexibility somewhat:

Maybe you could take them to a cobbler and ask if there's anything they could do to make the soles stiffer?

Maybe look at the boots made by Lems or GEA Waldviertler? They both make leather zero drop boots with a wide toe box.
