California food banks are fine for now, and it sounds like CA is going to figure out how to support CalFresh when the SNAP cuts hit.
Your town might have a Community Services Agency type thing (what is called in MTV) to support seniors, homeless folks, and those trying not to become homeless.

International rescue committee helps resettle folks in the US, from supplies to legal to job training. They are also preparing to help with the malnutrition crisis in Gaza.
I got some recommendations for supporting trans folks, but haven't sorted through them or done due diligence.

Regional planned parenthoods directly provide healthcare. Donations there can help people on Medicaid who don't have another doctor to go to.
Donorschoose can get supplies to teachers in low income schools, not just books and computers but also snacks and other personal supplies for students.

ACLU is the key organization from the legal side. They've prevailed in 78% of the judgements on the cases filed so far. But that's all long term.
Otherwise it depends on which marginal groups you want to support. united farm workers has a fund for supporting members.
